Background of the Chemex Coffee Maker
Dr. Peter Schlumbohm PhD invented the Chemex Coffee Maker in 1941. He made a carafe out of non-porous borosilicate glass, which fastened with a wooden collar and a leather tie. The vessel and other pieces of the collection are on permanent display at MOMA NY, the Smithsonian and other fine museums.
The Chemex coffee maker collection’s design (wood handle, leather cord, hourglass carafe) remains as it was when P. Schlumbohm invented it.
Why is Chemex so loved by coffee enthusiasts?
Coffee enthusiasts claim that the Chemex coffee maker, together with Chemex-Bonded Coffee Filter, make perfect coffee. The filter is scientifically designed to prevent bitterness and to avoid any sediment to drip into the coffee; and simultaneously used with the non-porous glass, the beverage comes out clear, pure and flavorful. Also, coffee can be made as strong as wished without being bitter or too watery. The Chemex coffee maker collection is also perfect for iced coffee and coffee flavoring for gourmet recipes.
The Chemex coffee maker uses the infusion method to brew coffee; this fact is what makes it quite similar to the usual drip coffee. However, unlike most auto-drip coffee machines’ filters, Chemex filters are significantly thicker (around 25%) which results in a richer cup of coffee slowly brewed.
The Chemex Coffee maker’s design and usability
There are three series of Chemex Coffeemakers:
The Chemex coffee maker is a sophisticated and elegant, hourglass shaped vessel made of high quality, heat resistant glass. It holds around its neck a polished wood collar, which serves as an insulated handle and leather tie. In the Glass Handle Series the wood collar and leather tie are replaced by a glass handle. There are four models of the Chemex: 3 cup, 6 cup, 8 cup and 10 cup. The last three use the same filter, but the 3 cup Chemex uses a smaller filter with the same characteristics as the rest.
How to use a Chemex Coffee Maker?
Weigh the coffee and grind it to medium coarse ground.
*Chemex Coffee Maker suggests: use a burr grinder because it delivers a more consistent particle size, allowing for a more even extraction and fuller bodied cup of coffee.
Unfold your filter and place it in your Chemex, ensuring that the triple-fold part is placed just over (without obstructing) the carafe lip used for pouring.
*Chemex Coffee Maker suggests: Dampen the filter with warm water to rinse and preheat the brewer. Once the water has drained through the filter completely, pour it out of the brewer while keeping the filter sealed against the coffeemaker wall.
Put one rounded tablespoon of ground coffee for every 5 oz. cup into the filter cone, give it a gentle shake so that it flattens the bed allowing a more-even pour.
Pour a small amount of hot water over the coffee grounds to wet them, and wait for about 30 seconds for them to “bloom”, releasing the most desirable coffee elements from the grounds.
*Chemex Coffee Maker suggests: Perfect brewing temperature is about 200°F.
After the grounds bloom, slowly pour the brewing water over the grounds while keeping the water level well below the top of the Chemex.
Pour water in a circular pattern starting in the center. Avoid pouring on the filter. Allow the water to drip through the grounds until the slurry drops 1 inch from the bottom of the filter. Allow the water to drip through the grounds entirely. A Chemex brew should take about 4 minutes.
Once the desired amount of coffee is brewed, lift the filter with spent grounds out of the brewer and discard.
In order to keep your coffee warm you may place the Chemex directly on either a glass stove top or gas flame both at low heat.
*Chemex Coffee Maker suggests: If you have an electric coil stove top, you must utilize the Chemex stainless steel wire grid (TKG) in between the Chemex and the coils to prevent breakage. Be sure that there is a small amount of liquid in the carafe before placing it on a warm heating element.
Other Chemex products
It achieves the recommended (200ºF) brewing temperature. It’s also made from heavy-walled heat-resistant glass and will ensure an optimal boiling and brewing process. A silicone stopper, placed in the neck of the kettle, will help the brewed water stay at the right temperature while venting steam, so it stays cool to the touch for safe handling.
